Does the HJG L1011 Reverser doors deploy fully as soon as I activate the reverse function or the reverser door deployment movement is proportional to how much reverse trust is applied?

"NO" .... the reverser doors on of the L1011 models 3 engines all function .... in that they do deploy/"open fully" when reverse is "pulled-on" after landing.
The only restrictions here being .... (1) that all 3 engines must first be fully idled before reverse can be "pulled-on"/selected/will work at all .... and (2) there is no means, within FS (that I'm aware of at least) that allows one to control/govern the amount of reverse thrust being applied once selected.
I think, from memory, reverse thrust is about 75% N1 .... or thereabouts .... but .... I canĀ“t be absolutely sure without first rechecking and then further commenting later.

You can control the amount of reverse thrust simply by not holding F2 and slowly pushing it repeatedly until you get the right amount of thrust or using a throttle axis to set reverse thrust. That is why the flight dynamics entries reference "Max Reverse Thrust".
As for the animations - you are correct that the rings translate properly on all SGA/FFS/Vistaliners offerings in that they fully translate once reverse of any level is selected and fully stow when reverse is deselected, even if the engines are still above idle, just as with the real aircraft. This is one of the major flaws of many models for FS9 and FSX because all reversing systems deploy fully at selection of reverse thrust, there is no "proportional movement". It was a "cut corner" by Microsoft (even though the animation code has been there since FS2000) to do reversers that way.
