why is there No Liquids Please sign on cockpit? Are pilots allowed to drink water or coffee if they are thirsty on long flights?

It's not that no liquids are allowed of the flight deck .... because that'd be absolutely ridiculous .... HOWEVER .... some airlines do placarded their flight decks with "NO LIQUIDS" (or words to similar effect) notices .... which I, personally, interpret meaning no liquids near that part of the flight deck and it's associated avionics equipment. Some older aircraft flight decks actually have a drink holder .... located at roughly the position of that placard, or rather, the position currently occupied by the sub panel view icons menu in tthat particular panel .... I know for a fact that AIR NAURU's B737-200 ADVC's most certainly did !
I think any/every long service professional airline pilot could probably tell a tale or two about drinks being spilled/slopped over the Center Pedestal during sudden and severe air turbulence .... or other inadvertent accidents .... and the damage it can do to avionics equipment not to mention the cost of repairing that equipment afterward too.

I think it was just recently that a United AL B777 enroute from Chicago to London had to make an unscheduled stop at Toronto,when the aircraft was involved in some CAT and a cup of coffee was spilled somwhere in the flight deck.
