Given that we know each of the B707/720 simulations are fine .... I suspect this particular issue could come down to 2 other possibilities ....
1. A (possible) joystick/controller device callibration related issue .... in respect of its ET assignments (if these are assigned as such and at all) since it "CAN" happen.
2. A possible guage corruption at the time of downloading, file extraction, or installatiom .... or even during retrieval of the Guages/Core files component for any of these panels from whatever media they may have been stored upon prior to installation (if that's been done at all) .... since it "CAN" happen also .... and "DID IN FACT" happen to me just recently (2 weeks ago in fact), but, not in regard to any HJG simulation.
"THESE" .... are each long shots .... but .... "ARE": possibiliies and as such "DO" need being considered also
In the case of #2 above .... I recently downloaded and installed "a simulation" in Colombia. It performed magically on our systyem there. I then saved that particular simulation to a DVD and brought it back home with me and installed it our NZ based PC. If flew just as well at home here also .... "until I engaged the AP" .... and wnen I did it began to slowly pitch down and eventually started diving towards tierra firma like a JU 87 STUKA .... and in manner perhaps similar to what you are reporting !!!!
What the %&@# is going on here .... I thought .... since "THIS" never happened before.
A few days of "FRUSTRATING" trouble shooting failed to resolve my issue .... SO .... as a last resort .... I unistalled this simulation (manually), then, went back to the website from where I'd originally downloaded it, then, re-downloaded and re-installe it "AGAIN" .... and "THIS TIME" the simulation performed perfectly and without any such issues as described after the AP was engaged.
"THIS" is something you may like to try also .... in addition to "checking joystick/controller device callibration/s" as well.
Here's what I suggest ....
1. Uninstall/delete the B707/720 simulation/s (aircraft base pack/s) completely .... and the panel/s too.
2. In the case of the panel in particular .... go to the FS GAUGES folder and identify .... and then manually remove .... each the of the following 3 gauge files "ONLY" ....
707-120.gau
707-320.GAU
707-LATE.GAU
.... remove just these 3 gauges "only" since these files are all that constitute the gauges content of the entire HJG B707 aircraft/panel inventory. Don't worry about trying to remove the panel sound content .... it can't be contributory to this particular issue and can "stay".
3. Download (from our website) and reinstall the B707-138 Aircraft Base Pack .... and/or each HJG B707/720 Aircraft Base Pack generally.
4. Download (from our website) and reinstall the B707-138 1959 panel (for that particular QF era B707-138) .... along with any other required B707/720 panel version customised for each of the individual B707/720/C125 aircraft base packs. Remember .... it's important to apply "the correct panel version with each individual base pack" or problems can result (upon reviewing the above panel image I've just noted the wrong panel version does appear to be used with that particular simulation .... but .... given the AP programming for each of these B870/720/C135 SERIES panels is precisely the same, then, I don't think an obviously wrong panel assignment is contributory to your particular issue). Use the following B707/720/C135 SERIES paanel assignments list to identify the correct/customised panel versiom for each individual base pack ....

C135 SERIES - WHAT PANEL/WHAT PLANE
tonymadgehjg.proboards.com/thread/1560/hjg-c135-panel-which-plane
.... and just for "good measure" (though it doesn't relate to the reported issue) here's simlar list of customised B707/720/C135 sound assignments also ....

5. Download (from our website) and reinstall the B707 Panel Gauges/Core Files package .... and extract, then reininstall, the 3X B707 Panel Gauges files, but, "DO NOT" overwrite the originals .... and which I why I request (above) the originasl be manually removed/deleted.
It might also pay to be careful in respect of what method of file extraction you're using during unzipping preocedures too .... since it has been suggested, in the past, that certain methods of extraction can/might result in file corruption/s.
You can, if you wish, also reinstal the Panel Sound content .... and which "IS" OK to overwrite .... but again .... don't overwite the gauges !!!!
In case any such corruption has occurred (unbeknowingly) .... then .... "TRY" this removal and re-installtion procedure .... and report back. In the light of my own recent experience (with another simulation) this procedure "DID" work for me
This'll likely be the result of a CFG or other simple "FSX specific installation/cofiguration" error .... on your part. An entitrely separate issue, so, consider starting another thread concerning it.

I was going to try the 720, but it wouldn't show up in the selection menu.
