This .... will tell you all you essentially need to know about what's different between not only the B707-320C panels .... but .... all HJG B707/720 panels generally.
The definining factor between most of these panels is gauge/instrument standard for most of these aircraft types (1959, 1965, and 1970 eras) .... and the fact that each main panel features engine instrumentation callibrated (as best FS will permit) in accordance with known thrust/performance ratings (fuel consumption, and other related parameters) in relation to each engine type. These panels "ARE" all different in that respect. There's also some very minor variation in rspect of some of the F/E, Overhead, and CP sub panels too .... again mostly in accordance with era or airline configuration.
This information .... along with a lot more concerning HJG models, panels, textures, and soundpacks .... is available on the "ABOUT HJG AIRCRAFT" forum page.

The only difference is that the American Airlines 707-323C has only two turbocompressors (check the Flight Engineer panel), while other 707-320Cs have three.
